Slinzega

The typical artisan cold cut of Valtellina

Valtellina slinzega is a typical cold cut of local artisan tradition and is considered a cousin of bresaola, so to speak. Small-sized anatomical cuts are used to make slinzega, and the finished product weighs in at just 500-600 g. Due to its rich and authentic flavour, slinzega is usually knife cut, or rather sliced, and is the perfect cold cut for serving with drinks, especially with a good glass or Valtellina red wine.
