The typical bresaola of Valchiavenna distinguishes itself from traditional Valtellina cold cuts due to its special production and ageing process, which has stayed as true as possible to the ancient Valchiavenna recipe. The beef cut must be special, meticulously selected and prepared with natural casing. Pepper, juniper berries, bay leaves, nutmeg, cinnamon and garlic are the main ingredients of Valchiavenna bresaola, with its unique, delicately smoked flavour, different from all other bresaola.
